Crispy Salmon with Lemon Dill Sauce

Ingredients (2 servings)

  • 2 salmon fillets (each 200 g), skin-on
  • 400 g potatoes
  • 1 head broccoli
  • 1 pinch salt & pepper
  • 3 tbsp ghee or coconut oil
  • 10 g parsley (optional)

SAUCE

  • ½ leek
  • 1 lemon
  • 10 g dill weed, fresh
  • 200 ml oat cuisine
  • 1 tbsp corn starch
  • 2-3 tbsp water
  • 2 tbsp ghee or coconut oil
  • 1 pinch salt & pepper

Instructions

  1. Cut potatoes into mouth-sized pieces and cook in salty water (peeling optional) until soft.
  2. Remove the broccoli florets from the stalk.
  3. Wash leek thoroughly and cut into thin slices.
  4. Juice lemon.
  5. Chop dill weed.
  6. Sprinkle salt on the salmon fillets on all sides including the skin.
  7. Prepare the sauce by heating ghee or coconut oil in a sauce pan and sauté leek.
  8. Add oat cuisine, lemon juice and season with salt and pepper.
  9. For thickness, prepare corn starch with water in an extra bowl, add to the pan sauce and heat slowly until thick. Add dill weed at the end.
  10. Steam broccoli by using a metal colander in a sauce pan with boiling water for about 6 minutes.
  11. Heat ghee or coconut oil in a pan over medium-high heat.
  12. Add salmon fillets to the pan (skin down) and cook for 4-5 minutes, until the skin is crisp.
  13. Baste the fillet with oil while the skin is crisping.
  14. Flip the salmon, cook for another approximately 2 minutes (lid on), and then place on plates with potatoes, broccoli and lemon sauce.

Garlicky Shrimps with Lemon Quinoa

Garlic Shrimp and Lemon Quinoa

Ingredients (2 servings)

  • 150 g quinoa, any variety
  • ½ lemon, organic
  • 200 g asparagus (or 8 spears)
  • 2 cloves garlic
  • 1 chili or 1 pinch chili flakes
  • 200 g shrimps
  • 2 tbsp ghee or coconut oil
  • 1 pinch of salt & pepper
  • 1 handful almonds (optional)
  • some mint leaves

Instructions

  1. Wash quinoa, then place in a saucepan with two parts salted water. Bring to the boil, then reduce heat to low and let simmer with lid until cooked.
  2. Juice the lemon and cut zest into small pieces.
  3. Slice asparagus diagonally.
  4. Chop chili and peeled garlic.
  5. Heat ghee or coconut oil in a wok, then add garlic, chili, and shrimps with a pinch of salt and pepper. Cook until shrimps turn pink.
  6. Mix wok content with quinoa, asparagus, lemon zest, lemon juice, optionally green peas or almonds, toss until combined and serve with mint leaves.

Broccoli Shrimps Wok

Ingredients (2 servings)

  • 150 g whole-grain rice
  • 12g shiitake mushrooms, dried (optional or white mushrooms as alternative)
  • 1 onion
  • 1 garlic clove
  • 1 chili
  • 1 broccoli head
  • 200 g shrimps
  • 3 tbsp ghee or coconut oil
  • 1 pinch of salt & pepper
  • as needed scallions

SAUCE

  • 2 tbsp soy sauce
  • 2 tbsp water
  • 1 tsp corn starch

Instructions

  1. Cook rice according to package instructions.
  2. Soak shiitake mushroom in a bowl with water.
  3. Remove broccoli florets from stem.
  4. Dice onion.
  5. Chop garlic and chili.
  6. Chop scallions for garnish.
  7. Combine soy sauce, water and corn starch in a small bowl.
  8. Cut shiitake mushrooms in half.
  9. Heat a part of the ghee or coconut oil in a wok or pan.
  10. Roast chili and garlic for 1-2 minutes.
  11. Add shrimps, season with salt & pepper, and roast for another 1-2 minutes.
  12. Remove from wok as soon as shrimps turn red.
  13. Add the remaining ghee or coconut oil and roast the diced onion.
  14. Add broccoli florets to the wok and cook for 2-3 minutes.
  15. Add shiitake mushrooms and sauce.
  16. Reintroduce shrimps and season with salt & pepper if needed.
  17. Top with scallions and serve with rice.

Miso White Fish Soup

Ingredients (2 servings)

  • 1 liter water
  • 3 tbsp light miso paste
  • 1 chili
  • 1 thumb-sized piece of ginger
  • 3 lime leaves
  • 500 g white fish fillets e.g. cod fish
  • 2 bok choy
  • 100 g ladies’ fingers (optional)
  • 1 bunch enoki mushrooms
  • cilantro leaves to garnish
  • rice or rice noodles for serving

Instructions

  1. Put miso in saucepan with water and add salt if needed. Simmer on low heat.
  2. Add ginger, chili, and lime leaves.
  3. Cut fish fillets in half midways and add to the broth. Simmer for 8-10 minutes until cooked through.
  4. Cut bok choy leaves from stems. Cut stems into bite-sized portions and set apart. Now, cut the leaves separately.
  5. Slice ladies’ fingers thinly.
  6. Remove the fish from the saucepan and set to a plate, fragmenting them into big chunks.
  7. Bring the broth in the saucepan to the boil.
  8. Introduce the bok choy stems into the broth. 1 minute later add ladies’ finger. Continue cooking for 1-2 minutes.
  9. Now, add bok choy leaves and continue cooking for 1 minute until wilted.
  10. Before serving, separate the enoki mushrooms and add to the broth.
  11. Place fish chunks into bowls, ladle over some broth with vegetables.
  12. Serve with rice or noodles and garnish with cilantro.

Brazilian Moqueca (fish stew)

Ingredients (2 servings)

  • 350 g fish fillets (any kind e.g. codfish or seabream)
  • 150 g whole-grain rice
  • 2 garlic cloves
  • 1 onion
  • 1 red paprika
  • 1 yellow paprika
  • 2 tomatoes
  • 2 tbsp ghee or coconut oil
  • 200 ml coconut milk
  • 1 tsp turmeric, ground (as alternative to originally palm oil, if not available)
  • ½ lime, juiced or 1 tbsp vinegar
  • 15 g cilantro
  • 15 g scallions
  • 15 g dill-weed
  • 1 pinch salt & pepper
  • vegetable broth (optional)

Instructions

  1. Chop garlic cloves.
  2. Cut the fish fillets into pieces about 5 cm wide and marinate with salt, pepper, and garlic.
  3. Cook rice according to package instructions.
  4. Slice onions, paprika, and tomatoes.
  5. In a pan, build layers starting with onion, paprika, tomatoes, then fish, again onions, paprika, and tomatoes.
  6. Add oil, coconut milk, turmeric and lime juice and season with salt & pepper or vegetable broth.
  7. Turn on the stove and cook everything for 20-30 minutes with lid on.
  8. In the meantime, chop herbs.
  9. As soon as the fish is cooked, add the herbs to the pot and serve with rice.
