Korean Bibimbap

Korean Bibimbap 2

Ingredients (2 servings)

  • 150g brown rice
  • ¼ head purple cabbage
  • 2 carrots
  • 100 g shiitake mushrooms, fresh (or 25 g dried to be soaked)
  • 30 g veggie mince
  • 8 tbsp soy sauce
  • 3 tbsp coconut oil
  • 1 chilli
  • 1 garlic
  • 400 g spinach leaves
  • 100 g mung bean sprouts
  • 2 eggs, organic (optional)
  • as needed spring onions
  • nori sheets or furikake (optional)
  • chili sauce (optional)

SAUCE:

  • 2 cloves garlic
  • 2 tbsp red or white miso paste
  • 1 tbsp sesame seeds
  • 1 tbsp coconut sugar
  • 1 tbsp sesame oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp water

Instructions

  1. Cook rice according to the package instructions.
  2. Soak veggie mince in soy sauce.
  3. Shred the cabbage, julienne the carrots, slice the mushrooms, cut the onions.
  4. Chop chilli and peeled garlic cloves.
  5. Mix all sauce ingredients in a small bowl. Add more water, if it’s too thick.
  6. Heat coconut oil in a wok over high heat.
  7. Roast one chopped garlic and chilli lightly, then add mushrooms.
  8. Remove from wok and sauté cabbage.
  9. Repeat the process for spinach and mung bean sprouts.
  10. Turn the empty wok to medium and fry the eggs.
  11. Assemble the Bibimbap into bowls, top with onions, sesame, furikake/chopped nori sheets and drizzle some sauce on top.
  12. Enjoy your meal!

Avocado Lime Tart

Ingredients (14 pieces)

FLAN CASE

  • 300 g cashew nuts
  • 4 small limes, organic
  • 70 g desiccated coconut
  • 150 g dried figs
  • 2 tbsp coconut oil
  • 1 tbsp rice syrup
  • ½ tsp vanilla powder
  • 1 pinch salt

FILLING

  • 6 medium avocados
  • 4 small limes, organic
  • 7 tbsp rice syrup
  • 1 pinch cinnamon, ground
  • 1 tsp vanilla powder
  • 50 g coconut cream
  • 100 ml coconut oil
  • 50 g desiccated coconut

Instructions

  1. Wash the limes in hot water, dry them and grate the zest from 4 limes.
  2. Blend the lime zest with the cashew nuts, 70 g desiccated coconut, figs, 2 tbsp coconut oil, 1 tbsp rice syrup, ½ tsp vanilla powder and salt in a blender until a sticky mass forms.
  3. Press the mixture onto the bottom of the ungreased mold with wet hands and refrigerate until the filling is ready.
  4. For the filling, halve, stone and peel the avocados.
  5. Grate the zest of the remaining limes and squeeze the juice from all the limes.
  6. Put the avocados, lime juice and zest, 6 – 7 tbsp rice syrup, 1 tsp vanilla powder, cinnamon powder and coconut cream in a mixing bowl and puree finely with the hand blender.
  7. Finally stir in 100 ml of coconut oil with a spoon.
  8. Put the filling on the cold mass in the mold, distribute evenly and leave to set in the fridge overnight.
  9. Decorate with the remaining desiccated coconut.

Ingredients (2 servings)

  • 150 g arugula
  • 1 red onion
  • 150 red radish
  • 150 g cherry tomatoes
  • 1 orange
  • ¼ pomegranate
  • ½ cucumber
  • 1 avocado
  • 1 handful chives, chopped
  • 1 handful sesame seeds

DRESSING

  • ½ lemon, juice
  • 2 tsp flaxseed oil
  • 1 pinch salt & pepper
  • 1 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1 tbsp maple syrup

Instructions

  1. Rinse arugula.
  2. Slice red onion, red radish and cucumber.
  3. Halve cherry tomatoes.
  4. Peel and fillet the orange.
  5. Loosen the pomegranate seeds.
  6. Deseed, peel the avocado and cut into slices.
  7. Mix the ingredients of the dressing.
  8. Mix salad ingredients, dress with the dressing, top with chives and sesame seeds, and enjoy!

Indonesian Gado Gado

Ingredients (2 servings)

  • 2 potatoes
  • 2 carrots
  • 200 g tempeh or tofu
  • 200 g green beans
  • 2 eggs (optional)
  • ¼ Chinese cabbage
  • ¼ red cabbage
  • 120 g mung bean sprouts
  • 2 tbsp peanuts, ground
  • 3-4 tbap coconut oi (optionally)

SAUCE

  • 1 garlic clove (optional)
  • ½ lime
  • 1 tbsp tamari or soy sauce
  • 150 ml coconut milk
  • 1 tbsp maple syrup
  • 6 tbsp peanut butter
  • 1 pinch of salt

Instructions

  1. Cook hard boiled eggs.
  2. Cut the potatoes into 1 cm slices (peeling optional).
  3. Slice carrots diagonally.
  4. Cut tempeh into cubes or strips.
  5. Trim the ends off the green beans.
  6. Slice the Chinese and red cabbage.
  7. Use a metal colander inside a large pot and bring 0.4 l water to a boil.
  8. Add the potatoes, cover and steam for 8 minutes.
  9. Add the carrots (you can also only use half of the carrots with the other half remaining raw) and steam for another 4 minutes.
  10. Add the green beans and steam for 3 minutes.
  11. Eventually, add the tempeh or tofu cubes and steam for 3 minutes. Alternatively, fry them in coconut oil instead.
  12. Once the potatoes are tender, transfer everything to a large bowl.
  13. Now, add the Chinese cabbage to the pot until wilted.
  14. Mince the garlic, juice the lime and combine with remaining sauce ingredients.
  15. Assemble steamed vegetables and tempeh into bowls along with red cabbage, mung bean sprouts, and sauce.
  16. Peel and cut eggs in half and top the bowls with the egg halves and ground peanuts.
  17. Enjoy the meal!

Ingredients (2 servings)

  • 40 g veggie mince (e.g. based on soy or pea)
  • 8 tbsp tamari or soy sauce (or 6 tbsp and 2 tbsp fish sauce)
  • 1 tsp chili paste / sambal oelek
  • 15 g dried Mu Err mushrooms
  • 125 g glass noodles
  • 1 onion
  • ¼ red cabbage or 1 kohlrabi
  • 2 carrots
  • 1 chili
  • 1 tbsp coconut oil
  • ¼ bunch green onions
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar (optional)
  • 2 tbsp sesame seeds

Instructions

  1. Combine tamari, fish sauce and chili paste in a small bowl and soak veggie mince in that bowl.
  2. Soak Mu Err and glass noodles in boiling water in two separate bowls.
  3. Slice the cabbage into 2cm thick strips.
  4. Slice carrots.
  5. Peel and slice the onion.
  6. Mince chili and green onions.
  7. Slice Mu Err mushrooms while removing the stem.
  8. Heat coconut oil in a large pan over high heat.
  9. Sauté onion.
  10. Add chili, carrots, and cabbage one after another.
  11. Divide glass noodles in bowls.
  12. Add the veggie mince and Mu Err mushrooms.
  13. Divide the pan’s content on top of the glass noodles, drizzle some sesame oil (and optionally rice vinegar), and stir.
  14. Top with sesame seeds and green onions and serve.
