Noodle Salad with Garlic Shrimps and Zucchini 2

Ingredients (2 servings)

  • 300 g zucchini 
  • 200 g shrimps
  • 100 g gluten-free noodles (e.g. rice noodles, Shiratake noodles, edamame pasta or noodles based on sweet potato or canna starch)
  • 1 red onion
  • 3 cloves garlic
  • 2-3 tbsp coconut oil
  • as needed sesame oil
  • 1 bunch Thai basil, fresh 
  • 1 pinch salt & pepper
  • 1 lime
  • 2 chili peppers

Instructions  

  1. Cook pasta according to the package instructions. Reserve some of the cooking water before draining the pasta.
  2. Peel and slice the onion thinly
  3. Mince chili.
  4. Rinse and dice the zucchini.
  5. Rinse and chop Thai basil leaves.
  6. Heat 1-2 tbsp coconut oil in a pan over medium-high heat.
  7. Sauté half of the onion and chilli with a pinch of salt until softened.
  8. Then, add the zucchini and sauté for another 7-10 mins.
  9. Meanwhile, peel and mince the garlic cloves.
  10. Transfer the content of the pan to a bowl and return the pan to medium.
  11. Heat the remaining coconut oil in the pan, add minced garlic, and then add the shrimps with a pinch of salt and pepper.
  12. Sauté for 3-5 minutes until the shrimps have changed color.
  13. Reintroduce the zucchini medley with a bit of noodle water and potentially more coconut oil if you like.
  14. Season to taste and heat through.
  15. Divide noodles onto plates or into bowls, top with the pan’s content, the remaining raw onion, a drizzle of sesame oil and seeds, chopped Thai basil, and lime wedges.
  16. Enjoy your meal!

Chia Pudding

Ingredients (2 servings)

  • 60 g chia seeds
  • 400 ml homemade oat drink
  • fruit of choice e.g. raspberries, blackberries, blueberries, strawberries, goji berries, apples, bananas, passion fruit
  • seeds & nuts of your choice e.g. sesame seeds, flaxseeds, hemp seeds, pine nuts, almonds, cashews, walnuts, coconut flakes

Oat drink

  • 400ml water
  • 40 grams rolled oats
  • 2-3 ice cubes
  • 1 pinch of salt (optional)
  • 2-3 dates (optional)
  • 1 pinch of cinnamon (optional)

Instruction

  1. For the oat drink, put ingredients (ice cubes to prevent oat drink from getting slimy) in a blender and blend for 2-3 minutes.
  2. Strain the contents through a tight-meshed nut milk bag and thoroughly squeeze out the rest.
  3. Place the chia seeds in a bowl and mix with the oat drink.
  4. Let the chia pudding soak for 30 minutes in the refrigerator.
  5. Then top with fruit, nuts and seeds of your choice.

Tofu-Veggie Stir-Fry

Tofu Veggie Stir Fry 2

Ingredients (2 servings)

  • 150 g whole-grain rice
  • 15 g shiitake mushrooms
  • 250 g tofu
  • 2 tbsp tamari or soy sauce
  • 2 tsp chili sauce
  • 1 1⁄2 tbsp nut butter (e.g. cashew)
  • 1⁄2 tbsp maple syrup
  • 1⁄2 tbsp lime juice
  • 2 cloves garlic
  • 1 thumb size fresh ginger
  • 150 g white cabbage
  • 1⁄2 red bell pepper
  • 1 spring onion
  • 2 tbsp coconut oil
  • as needed mung sprouts (optional)
  • as needed lime wedges (optional)
  • as needed fresh cilantro, chopped

Instructions

  1. Prepare rice as instructed according to the package.
  2. Soak shiitake mushrooms in water.
  3. Cut tofu into cubes and add to a bowl along with 1 tbsp soy sauce and 1 tsp chili sauce. Stir to coat and set aside.
  4. Mix nut butter, 1 tbsp of soy sauce, maple syrup, lime juice, and 1 tsp chili sauce in a bowl.
  5. Mince garlic and ginger.
  6. Slice red cabbage, red bell pepper and spring onions thinly.
  7. Cut shiitake mushrooms into halves.
  8. Heat 1 tbsp coconut oil in a wok over medium heat.
  9. Add marinated tofu and fry until brown while gently flipping.
  10. Take the tofu out of the wok and set aside.
  11. Return the same wok to medium heat and heat up remaining coconut oil.
  12. Add mushrooms, cabbage, and bell pepper and sauté while stirring.
  13. Cook with the covered lid for 2-3 min.
  14. Add ginger, spring onions, mung sprouts, and garlic, stir, cover, and cook for another 1-2 min.
  15. Return cooked tofu to the pan and add sauce.
  16. Stir fry for a few minutes until all ingredients are covered with the sauce.
  17. Serve with rice, chopped cilantro, and lime wedges.

Ingredients (2 servings)

COCONUT RICE

  • 180 g whole-grain rice
  • 200 ml water
  • 160 ml coconut milk
  • 1 tsp coconut sugar
  • ½ tsp salt

STICKY TOFU

  • 250 g tofu
  • 3 tbsp corn starch (optional)
  • 3 tbsp coconut oil
  • ½ lime, juiced
  • 3 tbsp maple syrup
  • 1 pinch of salt
  • ¼ tsp red pepper flakes
  • 1 pinch of garlic powder
  • 1 tbsp water

MANGO SALAD

  • 1 mango
  • 1 red onion
  • ½ cucumber
  • 1 green chili
  • 30 g cilantro
  • 1 lime
  • 1 pinch salt & pepper
  • garnish (optional): sesame seeds, toasted coconut, lime

Instructions

  1. For the coconut rice, add all the ingredients into a pot (or a rice cooker.) Bring to a boil and then cover and simmer for 20-25 minutes until the liquid is completely absorbed.
  2. In the meantime, press out the water from the tofu and cut tofu into cubes.
  3. For an extra crust, coat the tofu in the corn starch. You can also skip this step.
  4. In a large pan, heat coconut oil and pan-fry tofu. As soon as golden remove from pan.
  5. Meanwhile, prepare the sauce by combining the lime juice, maple syrup, water, and seasonings in a small bowl.
  6. Reintroduce the tofu to the pan and add the sauce. Cook on low heat. Flip the tofu cubes while the sauce thickens and eventually caramelizes.
  7. Prepare the salad by juicing the lime, chopping the remaining ingredients very small and adding all together to a bowl. Mix well to combine.
  8. Assemble the dish and garnish with sesame seeds, toasted coconut, lime and cilantro.

Ingredients (2 servings)

  • ½ head cauliflower
  • 2 tbsp ghee or coconut oil
  • 1 tsp chili powder or flakes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 pinch black pepper
  • 150 g whole-grain rice
  • 240 g black beans, cooked
  • 100 g corn
  • 1 avocado

SALSA

  • 200 g tomatoes
  • 30 g cilantro
  • 1 red onion
  • 1 garlic clove
  • 1 green chili
  • 1 lime
  • 2 tbsp olive oil
  • 1 pinch salt & pepper

Instructions

  1. Preheat the oven to 180°C
  2. Remove stem and leaves from cauliflower and chop it into florets.
  3. In a large bowl, combine ghee or coconut oil with all the spices.
  4. Add cauliflower to the bowl and use your hands to mix until all the florets are coated.
  5. Place on a baking tray with parchment paper and roast in the oven for 30-40 minutes.
  6. In the meantime, cook your rice according to the package instructions.
  7. Drain and rinse cooked black beans and corn and cut avocado into slices.
  8. For the salsa, cut tomatoes, red onion, cilantro, garlic, and chili, juice the lime and combine everything with olive oil and season with salt and pepper.
  9. Assemble the rice, cauliflower, beans, corn, and avocado into bowls and top with the salsa.
