Bittersweet Rainbow Salad
Ingredients (2 servings)
- 150 g arugula
- 1 red onion
- 150 red radish
- 150 g cherry tomatoes
- 1 orange
- ¼ pomegranate
- ½ cucumber
- 1 avocado
- 1 handful chives, chopped
- 1 handful sesame seeds
DRESSING
• ½ lemon, juiced • 2 tsp flaxseed oil • 1 pinch salt & pepper • 1 tbsp olive oil • 2 tsp Dijon mustard • 1 tbsp maple syrup
Instructions
- Rinse arugula.
- Slice red onion, red radish and cucumber.
- Halve cherry tomatoes.
- Peel and fillet the orange.
- Loosen the pomegranate seeds.
- Deseed, peel the avocado and cut into slices.
- Mix the ingredients of the dressing.
- Mix salad ingredients, dress with the dressing, top with chives and sesame seeds, and enjoy!
